My Dads favourite confection - Rock Buns

Ingredients

  • 240g flour
  • 2 teaspoons baking powder
  • 120g marg
  • 120g sugar
  • 120g dried fruit, I always put in extra!
  • 1 egg
  • Milk to mix
  • Caster sugar to sprinkle on top before baking

Sieve flour and baking powder and rub in marg till fine like bread crumbs. Stir in beaten egg and about a quarter cup of milk to make a sticky consistency.

Drop spoons of mix, I always use patty pan tins, on to greased tins. Sprinkle with sugar.
Bake for 12 to 15 minutes at 190 degrees. Enjoy. These do freeze very well.

Nigella's Yorkshire Pudding Recipe

Nigella's recipe makes the best Yorkshire pudding mix. Not only do we do them with sausages for Toad in the Hole, but I have done it with lamb chops and pork chops. Lots of gravy and it is yummy. As kids we used to eat the left over Yorkshire pudding with golden syrup.

  • 325 ml low fat milk.
  • 4 eggs
  • Half teaspoon salt

Beat this altogether and leave to stand for 15 minutes.

  • Add 250g flour.

You can use this recipe in muffin tins or in one large container. Yorkshire pudding must be poured into hot fat and put into a hot oven.
